Furthermore, the meat is leaner and firmer than that of the domestic pig. Production The wild boar legs are salted by hand, mildly smoked and then dried in fresh mountain air. Decent and home-made deer ragout of the butcher's shop Villgrater, simply warm up and put about the cooked pasta (spaghetti, penne or any kind of noodles), polenta, Crostini or on the rice.. After opening it, put in refrigerator and consume within less days.

Bresaola is an air-dried beef ham of Italian origin. We only use beef our own slaughter for its production.
