The Kaminwurzen (smoked sausages) are mildly smoked and air-dried sausages of beef and pork, a typical South Tyrolean speciality.

In all versions it is an ideal complement to fresh and mature cheeses, white and red meat, poultry, fish and sausages. Pears mostarda goes particularly well with blue cheeses and white meats.
