The Franciacorta Rosé 'Monique' is produced exclusively with Pinot Noir grapes the Sergnana vineyard and the Ronchetto vineyard. The grapes are macerated in contact with the skin for the time necessary to extract the finest aromas and to impart the rosy hue desired by the oenologist. Refined, it comes to the nose with a great olfactory expressiveness that combines with sweet nuances of red fruits and rosewater.

"Intensives, leuchtendes Orangerose mit anhaltender Perlage. In der Nase nach getrockneten Himbeeren, Zwetschgen, erinnert auch an Bratapfel und Waldfrüchte, schöne frische Töne im Nachhall. Am Gaumen saftig, mit knackigem Fruchtkern und gut eingebundener Perlage, wird im Finale minimal trocken."

"(2014) A saignée of Pinot Noir with a bronze tinged, onion-skin, delicate colour. Nice Pinot earthy and truffle vinosity, and that touch of mineral again, wisping smoke comes through. It has a touch of baked apple pie pastry, but then the vinous, truffle-touched meatiness though there is elegant balance and length. The wine is fermented very cool indeed, and even though it has 12 hours of skin contact, the idea is not to express red fruit, but Pinot texture and the terroir. According to Costantino their oenologist worries constantly about the delicate bronze colour, but they are determined to bottle with a natural Pinot 'partridge eye' colour."

"Bottles produced: 5,000 Dégorgement: January 2013 Total number of bottles produced (entire production): 100,000 - Total size of vineyards: 17 ha This is made only Pinot Noir grapes vineyards in Provaglio and the whole bunches are soft-pressed in order to obtain a free-run must, 80% of which is fermented in stainless steel and the remaining 20% in tonneaux before aging in the bottle for 30 months. This produces a pale copper color with a nice thick and creamy bead. The aroma is strong but elegantly fruity, a cross between crunchy apple, raspberry and the vitality of orange peel that in the end become a confit. The flavor has order and rhythm yet is almost enigmatic with its citrus freshness, seductive notes of karkadè flower and spice, a perfectionist minerality and a body making it just right to serve at the table, while the finish is dense and full of harmony and closes on tones of an iodine saltiness."
