Composition: 100% Pinot Noir, vinted through the saignée method The vineyard is at an elevation of around 750 m. (2,500 ft.) above sea level.
Production: Arunda Excellor is made using the same techniques that have been applied for nearly three centuries with champagne: a second fermentation of the wine in the bottle with a long period of aging on its own yeast. With Arunda Excellor Rosè, that lasts for at least twenty months.
The work in the wine cellar is also identical. After the aging has been completed in the cellars, the bottles are placed on the riddling racks. Over a period of six weeks, they are riddled by hand (the remuage), being regularly twist- ed and placed at a progressively steeper angle until the yeast and sediment have been completely moved the bottom of the bottle to the neck.
The bottles are then disgorged - that is, the yeast and sediment are removed, and the shipping dosage (the so-called liqueur d'expédition) is added.
Tasting: This is an extremely pleasant and expressive rosé sparkling wine that is full of life. It goes especially well with wild Scottish and Canadian smoked salmon of the best quality, with smoked trout, and with firm-fleshed saltwater fish.
The Excellor Brut is a sparkling wine to enjoy in happy company and is also an excellent companion to food. This rosé has lovely brilliant and shimmering tones of color that reflect the spectrum of onion colors up to the ruby red of Pinot Noir. With its fine perlage, it is full-bodied and lively in the glass, and it is immediately convincing through its fine scent of raspberries and wild strawberries.
Its incomparably soft, juicy, and round flavor pairs with the pleasant interplay of the sweetness of those aforementioned fruits and the lightly spicy nuance of the acidity. A sparkling delight that presents itself as full and round in the mouth. On the palate, the aroma and flavor intensify with a great balance.
