Fritz & Felix is a producer of handmade Schüttelbrot based in South Tyrol, Italy. The company was founded in 1960 by Johann Reichhalter and taken over in 1997 by his son Erwin Reichhalter, who combined a passion for traditional craftsmanship with his interest in innovative flavours. Fritz & Felix's Schüttelbrot is made according to a traditional recipe that has been passed down in South Tyrol for generations. Each loaf is made by hand and baked on stone slabs to ensure it is crisp and aromatic. Fritz & Felix uses only high-quality, natural ingredients, including flour, water, salt and spices such as fennel and coriander. The company also offers innovative flavours such as Schüttelbrot with walnuts and Schüttelbrot with dried tomatoes and olives. The Trenker Bakery's Schüttelbrot is rightfully called "handmade bread", as required by the "Südtirol" quality trademark. In fact, when he rolls out the dough for this traditional natural spice and rye bread, the baker places the dough on a round board: he shakes it until he obtains a thin disk, which is baked in the oven until it takes on the shape of a low, crisp focaccia.
