The white Sylvaner (also spelled Silvaner) is one of the oldest varieties of grapes cultivated by mankind. In South Tyrol, this type of grape is mainly grown in the Valle Isarco, Italy's northernmost vineyards.
The particular taste of the Sylvaner, in contrast to most other wine grape varieties, is directly and heavily influenced by soil conditions. Soil with a lot of clay results in relatively neutral tasting grapes. The rocky, mineral-rich soils of the area around Bressanone, with its own specific microclimate, result in a mineral-rich, racy, elegant Sylvaner grape, which smells of fresh hay and gooseberries.
Here at the distillery Zu Plun, we obtain our pomace for our characteristic Sylvaner Grappa the vineyard Köferer Hof in Novacella near Bressanone.
