Elena Walch is a respected winemaker and producer of quality wines the South Tyrolean wine-growing region in Italy. Her winery, which she runs together with her daughters, is located in Tramin on the Wine Road and covers a total of 55 hectares of vineyards.
Elena Walch inherited her passion for viticulture her father and studied agricultural sciences in Milan and Geisenheim before deciding to start her own winery in the 1980s. the beginning, her goal was to produce wines of the highest quality that reflect the terroir and characteristics of the region.
Today, Elena Walch is one of Italy's best-known winemakers and has received numerous awards for her wines. She is particularly proud of the fact that her wines regularly receive top ratings in renowned wine guides such as Gambero Rosso and Wine Spectator.

During the hot season, which did not allow for air curing, in earlier times people began to cook the meat first and then lightly smoke it. This resulted in a good shelf life and a food product with an extraordinary taste and aroma.
It is produced using white grape Must, acetified and aged in oak barrels to get its typical amber colour. Its most striking feature is that it does not alter the colour of dishes but it adds a fruity and mildly acid aroma and flavour (excellent to replace wine vinegar).
