Elena Walch is a respected winemaker and producer of quality wines the South Tyrolean wine-growing region in Italy. Her winery, which she runs together with her daughters, is located in Tramin on the Wine Road and covers a total of 55 hectares of vineyards. Elena Walch inherited her passion for viticulture her father and studied agricultural sciences in Milan and Geisenheim before deciding to start her own winery in the 1980s. the beginning, her goal was to produce wines of the highest quality that reflect the terroir and characteristics of the region. Today, Elena Walch is one of Italy's best-known winemakers and has received numerous awards for her wines. She is particularly proud of the fact that her wines regularly receive top ratings in renowned wine guides such as Gambero Rosso and Wine Spectator. Elena Walch's wines are characterised by elegance, freshness and finesse. She relies on careful work in the vineyard and in the cellar to develop the full potential of the grape varieties. She relies on autochthonous grape varieties such as Lagrein and Gewürztraminer, but also on international varieties such as Chardonnay and Cabernet Sauvignon. This variation is perfect for a small snack in between meals. The piece of lean bacon (mountain ham) can be cut in half again, as with the traditional Speckbrettl, and cut into bite-sized pieces with a knife. This piece of lean bacon also fits very practically on any slicing machine; only the rind needs to be removed.

During the hot season, which did not allow for air curing, in earlier times people began to cook the meat first and then lightly smoke it. This resulted in a good shelf life and a food product with an extraordinary taste and aroma.
It is produced using white grape Must, acetified and aged in oak barrels to get its typical amber colour. Its most striking feature is that it does not alter the colour of dishes but it adds a fruity and mildly acid aroma and flavour (excellent to replace wine vinegar).
