Caratteristiche: Il Veltliner è poco diffuso nella nostra provincia, viene coltivato quasi esclusivamente nella Valle Isarco. Si presume che abbia le sue origini in Austria. Vitigno: Veltliner verde (75 %), Veltliner rosso (25 %). Sistema di coltura: pergola o controspalliera. Produzione media: 85q/ha. Alcol: 13,0 Vol. %. Acidità: 6,1 gr/l. Estratto secco: 22,30 gr/l. Zucchero residuo: 2,7 gr/l. Caratteristiche organolettiche: vino bianco fruttato, gradevolmente aromatico. Colore: da giallo verdognolo a giallo chiaro. Profumo: delicato, gradevole. Sapore: secco, aromatico, fruttato, decisamente citrino, snello di corpo ma molto armonioso. Tenuta all'invecchiamento: 2-3 anni. Prima annata di produzione: 1961. Numero di bottiglie prodotte annualmente: 60.000. Comuni di produzione: Chiusa, Bressanone, Velturno, Varna, Renon. Uve: 75% Veltliner verde, 25 % Veltliner rosso. Esposizione ed altimetria: pendio sud-est, 300-600 m.s.l.m. Epoca e conduzione della vendemmia: metà settembre - metà ottobre; vendemmia a mano.

The classical bacon is produced of the best piece of the leg. Refined with spices, mountain herbs and salt, the bacon is pickled for 20 days. After a cold smoke phase with beechwood filings the bacon sides are matured for a total of 5 months in our pure mountain air at controlled temperature.

During the hot season, which did not allow for air curing, in earlier times people began to cook the meat first and then lightly smoke it. This resulted in a good shelf life and a food product with an extraordinary taste and aroma.
It is produced using white grape Must, acetified and aged in oak barrels to get its typical amber colour. Its most striking feature is that it does not alter the colour of dishes but it adds a fruity and mildly acid aroma and flavour (excellent to replace wine vinegar).
