Vinification: Spontaneous maceration with 30% stems in open tonneau for three weeks. Malolactic fermentation and ageing for 24 months on fine lees in oak tonneau. Bottling unfined and unfiltered in November 2020. Bottle ageing for at least 24 months.

Spontaneous fermentation with partly whole grapes in open tonneau, malolactic fermentation and ageing for 18 months on the fine lees in oak tonneau with several layers of grapes.
Maceration in large wooden vats for 3 weeks, malolactic fermentation and ageing for 18 months on the fine lees in oak tonneau. Bottled unfined and unfiltered at the end of April 2022. Matured in bottle for at least 6 months.
