After a short mash rest time, a light ruby-red must is produced the dark Lagrein grapes, which is then fermented like a white wine to deliver its fruitiness and freshness.
Location and characteristics of the soil: on vineyards which contains silty and sandy sedimentary depositions above the village St. Pauls (300 - 350 m a.s.l.)
Vine training system: Pergel and Guyot
Fermentation: after a short maceration on skins, slow fermentation at controlled temperature in stainless steel followed by maturation on fine yeast for 5 months, no malolactic fermentation

The St. Pauls Winery, also known as Cantina San Paolo, is a renowned winegrowing cooperative in the heart of South Tyrol, Italy. The winery was founded in 1907 by 23 winegrowers who joined forces to jointly market their wines.
