Vineyards: Bozen, Kaiserau, 270 m above sea level deep, sandy, well-aerated clay soils at the confluence of the Etsch and Eisack rivers, facing south

Vinification: temperature-controlled fermentation in stainless steel at 20°C for 8 days: the mash is pressed, with half the juice matured in stainless steel barrels and half in small wooden barrels for at least 12 months
Recommended with: chocolate mousse and fresh strawberries or raspberries, apple strudel, nut cake, buckwheat cake, sweet dumplings...
