Site: Our Sauvignon thrives at 350-400 m.a.s.l. directly below the Leuchtenburg ruins on gravel, clay soils and porphyry bedrock, giving it a unique character. Vinification and ageing: After the hand harvest, a short maceration and gentle whole cluster pressing takes place. After natural sedimentation and separation of the lees, the wine is fermented and aged on the fine lees under controlled temperature in large wooden barrels and stainless steel. Wine deion: Our Sauvignon presents itself complex with intense aromas of elder and exotic fruits. On the palate, mineral persistence with fresh, lively acidity and fine finesse on the finish.
