VINIFICATION: Fermentation on the skins at 26 °C with 7-days extended maceration, malo-lactic fermentation and 4-month ageing on the fine lees in stainless steel and large casks.
VINEYARD: South-facing slopes situated at 300 - 450 meters above sea level. Sandy, eroded porphyry soil, heat-retaining and well-drained.
TASTING NOTES: - deep cherry red - fruit-dominated nose, reminiscent of cherries, a light undertone of bitter almonds and violets - juicy and voluptuous on the palate, soft and round on the finish
RECOMMENDATION: This wine is well paired with pasta dishes, as well as lighter meats.

One of the traditional South Tyrolean dishes, are the bacon speck dumplings, hand made by the butcher's shop Steiner in Rasun
The classical bacon is produced of the best piece of the leg. Refined with spices, mountain herbs and salt, the bacon is pickled for 20 days. After a cold smoke phase with beechwood filings the bacon sides are matured for a total of 5 months in our pure mountain air at controlled temperature.
In order to assure the full forest flavour for the production of our special raspberry distillate, we only use raspberries grown at at high altitudes.
This delicious Marillengeist maintains the excellent flavour of the apricots Val Venosta, whose perfume is even stronger, thanks to the fizzy and fresh air of the nearby Ortles mountains, where they grow.
