Caratteristiche: ZONA E TERRENO: I vigneti intorno al paese di Cornaiano ed al borgo di Colterenzio presso Cornaiano si trovano a ca. 450 metri di altitudine su colline moreniche dell'epoca glaciale. La posizione e l'esposizione del pendio garantiscono un'insolazione ottimale che, insieme al povero terreno morenico-ghiaioso, fa nascere un vino pieno, di lunga durata. VITIGNO: Schiava di vecchie viti: Schiava nobile insieme alle sue antiche varietà tradizionali come la Schiava grigia, la Schiava media e la Schiava piccola. I vini Schiava sono delicatamente tannici, dal sapore delicato. VINIFICAZIONE: Vendemmia inizio - metà ottobre, resa per ettaro: 60 hl. Fermentazione sulle vinacce e rimontaggi per una settimana, fermentazione malolattica e affinamento in grandi botti di legno. ABBINAMENTI: La Schiava dell'Alto Adige Faß Nr. 9 viene prodotta solo con annate di ottima qualità per garantire l'elevata qualità costante di questo vino. Il carattere delicato della Schiava e la notevole concentrazione di tannini vellutati fanno del "Faß Nr. 9" un vino straordinario.

The Classico Quattrociocchi is an intense limpid golden yellow colour with greenish hues. The nose is fine and enveloping, with ample fruity tones of unripe tomato, lettuce and artichoke, accompanied by fresh hints of mint, basil and sage. The palate is elegant and vegetal, with hints of chicory, lettuce and celery. Bitterness is present and pungency is harmonic.

Bresaola is an air-dried beef ham of Italian origin. We only use beef our own slaughter for its production.
It is a fine, delicately aromatic dessert wine, with a light ruby color and an intensive nose of tea-rose. It is full-bodied and spicy-sweet on the palate. This wine pairs well with a wide variety of desserts, for instance, poppy-seed strudel or beignets.
The Kaminwurzen (smoked sausages) are mildly smoked and air-dried sausages of beef and pork, a typical South Tyrolean speciality.
