The Lagrein has a dark ruby colour, during its youth with violet, later with garnet red reflexes. It is a pleasant, dry red wine, with notes of violets, chocolate and liquorice, on the palate it is velvety and with mild acidity. It is rich in tannins, but in the Bolzano basin, these tannins evolve in a very mild and sweet way. Recommended pairings are game, red meat and ripened cheese

Smooth, velvety tannins, delicate scents of cocoa and stewed fruits combined with a characteristic structure and density delight the palate and promise a variety of surprises and a pleasant taste. Proper ageing in the bottle allows this still young wine to intensify its pronounced complexity even further. The Cabernet St. Valentin is an excellent accompaniment to strong red meat dishes the barbeque, to game and lamb and to piquant varieties of cheese.
