Through a gentle and natural cellaring, we preserve this wine's racy, fresh aromas. Straw-yellow tinged with green, our Weissburgunder, or Pinot blanc, presents a fruity nose of green apples and white blossoms. On the palate, this wine is fresh, lively and crisp, and surprises with its impressively full body.
Golden yellow color. Extremely complex range of aroma with notes of the red apple, the Williams pear and melon, underlined by a decent note of timber. It is strong while drinking with a balanced body and a fresh aftertaste.
Our pinot bianco grows in the Trifall vineyard at an altitude of 450 m. After the harvest, which is performed with various successive pickings for a period of two weeks, the controlled low temperature fermentation takes place in acacia barrels. The successive refinement also takes place in local acacia barrels, to confer this wine with its fresh and fruited apple and honey aromas.
Inspired by this significant project, by the small church just above the vineyards, and by St. Paul, who gave our winery its name, we elected to baptise this unique wine with the name of SANCTISSIMUS. The small harvest due to the age of the vines together with south-facing slopes guarantees the very best of grapes, hand-harvested with the utmost of care. Our reverence for this outstanding wine has impelled us to preserve the processing and ageing technique of a vinification system which is somewhat unusual in Alto Adige, and entails mild fermentation on skins followed by maturation in terracotta amphorae.

Gentle pressing of the whole grapes with natural sedimentation. Fermentation and ageing partly in large oak barrels and steel barrels for 12 months. Then assemblage and further storage on the fine yeast in steel barrels for 4 years.
