Site: 550 m above sea level; west-facing slope on deep, sandy loam; well-ventilated and warm site; Vine training: Guyot 7,300 vines/ha Yield: 60 hl/ha Vinification: The hand-picked grapes are gently pressed after a short maceration period. The must is clarified the lees by slow sedimentation and then fermented in 500 l wooden barrels (1/3 new wood). After malolactic fermentation, the wine is aged on coarse lees for 12 months in large wooden barrels. During this time, the yeast is regularly raked under. After this period, the wine is aged for 1 year in stainless steel tanks and then bottled. In the bottle, the Chardonnay matures for another 3 months. Wine deion: The Chardonnay Riserva shines in a strong golden yellow. The nose is characterised by complex and multi-layered aromas of tropical fruits, with a hint of vanilla and supporting, subtle wood notes. On the palate, the Chardonnay is voluminous and complex, with a fine creaminess and structure on the palate and a mineral, long finish.
