Valle Isarco Winery - Tradition and Innovation in Harmony Introduction: The Eisacktaler Kellerei, founded in 1961, is a winegrowers' cooperative in the heart of South Tyrol, Italy, that is both rich in tradition and innovative. In the idyllic Valle Isarco, one of the oldest wine-growing regions in Europe, the winery is dedicated to producing high-quality wines that express the region's unique terroir. With a blend of traditional craftsmanship, cutting-edge technology and environmental sustainability, the Valle Isarco winery has earned an outstanding reputation over the years. Location and terroir: The Valle Isarco stretches the Brenner Pass to the historic city of Bolzano and offers ideal conditions for viticulture thanks to its diverse landscape and alpine climate. The steep vineyards, which lie at an altitude of 450 to 950 metres, are characterised by mineral-rich, poor soils and a high temperature dynamic between day and night. These factors contribute to the development of wines with a distinct aroma and elegance. Grape varieties and wines: The Eisacktaler Kellerei places particular emphasis on autochthonous and regionally typical grape varieties, such as Kerner, Sylvaner, Müller-Thurgau and Grüner Veltliner for white wines and Lagrein, St. Magdalener and Vernatsch for red wines. In addition, international grape varieties such as Chardonnay, Pinot Grigio and Gewürztraminer are also cultivated. The wines are characterised by their freshness, fruitiness and finesse and reflect the authentic characteristics of the Valle Isarco. Sustainability and innovation: The Valle Isarco Winery attaches great importance to sustainable and environmentally friendly viticulture. The members of the cooperative work continuously to reduce the ecological footprint of their wineries and to conserve natural resources. This is reflected in the use of organic pesticides, the targeted promotion of biodiversity and the integration of solar energy into the production process. The winery combines traditional craftsmanship with state-of-the-art technology and always strives for the highest quality. The use of the latest cellar techniques and collaboration with renowned oenologists produces wines that delight both connoisseurs and wine lovers. Conclusion: The Eisacktaler Kellerei is a prime example of how tradition and innovation can be successfully combined. With its sustainable philosophy, attention to detail and passion for winemaking, the cooperative has created a range of products that enjoys great recognition on a national and international level. A visit to the Eisacktaler Kellerei is definitely worthwhile if you are in the Brixen - Eisacktal area!
During the hot season, which did not allow for air curing, in earlier times people began to cook the meat first and then lightly smoke it. This resulted in a good shelf life and a food product with an extraordinary taste and aroma.

It is produced using white grape Must, acetified and aged in oak barrels to get its typical amber colour. Its most striking feature is that it does not alter the colour of dishes but it adds a fruity and mildly acid aroma and flavour (excellent to replace wine vinegar).
Krakauer approx. 290 gr. - Hackerhof Lanz Bernhard
Classic Balsamic Vinegar of Modena for daily use.
This powerful white wine shows a straw yellow colour with green reflexes, a complex bouquet of lime, peaches and hints of mango and has a wonderful mouth fill and structure without missing the acidity that gives him the freshness in the aftertaste. A very complex and versatile wine that can be paired to many dishes.
