VINIFICATION: Gentle whole grape pressing and uncompromising must fractionation. Controlled fermentation of the base wine (80% steel, 20% tonneaux), tirage followed by bottle fermentation and yeast ageing for 48 months. Degorgement without liqueur.
WINERY: Slope facing east on the Mendelkamm. Old lime dolomite at 600 m above sea level.
DEGUSTATION NOTE: - golden yellow with fine and persistent perlage - delicate notes of white flowers - clear and mineral on the palate, juicy-salty with lively acidity.
