Deion: Once the Vernatsch grapes become fully ripe in these sun-drenched sites the grape stalks become reddish in colour and local growers call them "Roatfiassler" ("red-legged") in the local dialect. Hence the name. Bright ruby in colour, intensely fruity on the nose reminiscent of summer berry fruits and cherry; mellow on the palate with supple tannins, mild but refreshing acidity and attractive bitterness on the finish.
Food Choices: An ideal partner for full-flavoured starters, meaty fish and pasta dishes, pork and poultry, cold cuts of meat - especially speck -, salami and mild cheeses.

Winemaking: The crushed grapes are fermented with the skins in stainless steel tanks with subsequent malolactic fermentation. The new wine is matured in tank on the fine lees for four months.

The Schreckbichl Winery, also known as Cantina Produttori Colterenzio, is one of the best-known wineries in South Tyrol, a region in the northern part of Italy known for its excellent wine-growing areas. The winery was founded in 1960 by a group of winegrowers and has its headquarters in Schreckbichl, a small village in the municipality of Girlan. This variation is perfect for a small snack in between meals. During the hot season, which did not allow for air curing, in earlier times people began to cook the meat first and then lightly smoke it. This resulted in a good shelf life and a food product with an extraordinary taste and aroma.
It is produced using white grape Must, acetified and aged in oak barrels to get its typical amber colour. Its most striking feature is that it does not alter the colour of dishes but it adds a fruity and mildly acid aroma and flavour (excellent to replace wine vinegar).
