Pinot Bianco is part of the Burgundian Pinot family and is related to Pinot Grigio and the principal grape of Pinot family, Pinot Noir. As a wine, Pinot Blanc feels fresh and rich yet dry. It has a greenish yellow to light yellow color and light scents of green apple. The wine also shows a complex nutty flavor and hints of green leaves. It feels balanced between richness of texture and bright acidity.
Pinot Bianco Sirmian grows on the southern slopes above Nalles. It has aromas apple, citruses and pineapple which make the wine full and elegant. On the palate it has lively acidity and is harmonious on the finish.

The late harvest in October encourages persistence and opulence through a stimulating bouquet of apple and pineapple. A suitable appetizer as an aperitif, and a fruity-fresh companion to light starters, fish dishes and white meats. On the slopes of Margreid is planted the Penon vineyard with its pure limestone gravel soils.
The mixed limestone and clay loam of the Penon Vineyard ensure the harmonious aroma of the wine. As its taste is characterized by a well-balanced acidity and a persisting full flavour, this wine can be perfectly combined with light starters and dishes with fish or white meat.
Pinot Blanc, with its elegant aromas of apples and lemon and its lively acidity is the perfect wine for almost every occasion. In the glass it has got a greenish to light yellow colour. Pinot Blanc turns out especially fresh and fruity if, right before the harvest, there are large differences in temperature between night and day. In warmer vintages Pinot Blanc is richer and more intense, with aromas of ripe fruit.

Our pinot bianco grows in the Trifall vineyard at an altitude of 450 m. After the harvest, which is performed with various successive pickings for a period of two weeks, the controlled low temperature fermentation takes place in acacia barrels. The successive refinement also takes place in local acacia barrels, to confer this wine with its fresh and fruited apple and honey aromas.
A dry white wine in light straw yellow with pronounced apple aromas, a light vanilla note and a fresh, well-balanced acidity with creamy structure. Powerful body with juicy fullness and a persistent, salty finish.

In its youth, it is still wild. Once the stage of maturity for consumption has been reached, however, it becomes truly enthralling, with delicate mountain apple and lemon balm. The bouquet is unobtrusive, evoking the delicate fragrance of the flowers that sprout crevices above the tree line. A careful passage through wood lends the wine a suppler texture, which forms a harmonious with the unbroken, fresh acidic structure.

Inspired by this significant project, by the small church just above the vineyards, and by St. Paul, who gave our winery its name, we elected to baptise this unique wine with the name of SANCTISSIMUS. The small harvest due to the age of the vines together with south-facing slopes guarantees the very best of grapes, hand-harvested with the utmost of care. Our reverence for this outstanding wine has impelled us to preserve the processing and ageing technique of a vinification system which is somewhat unusual in Alto Adige, and entails mild fermentation on skins followed by maturation in terracotta amphorae.
Gentle pressing of the whole grapes with natural sedimentation. Fermentation and ageing partly in large oak barrels and steel barrels for 12 months. Then assemblage and further storage on the fine yeast in steel barrels for 4 years.
