VINIFICATION: Temperature-controlled fermentation in rotor tanks and vinification in small oak casks (Allier, Nevers, and Jupille) for fourteen months, followed by aging in large wooden barrels.

ABOUT THE WINE: In the Middle Ages, the most famous wines what is now Alto Adige were named after their regions: Traminer, Eppaner, Mataner (Montaner), Kaltaner (Kalterer), Curtätscher (Kurtatscher). They were always blends, although each zone had its own colorful spectrum of grape varieties. In the second half of the nineteenth century, the legendary oenologist Edmund Mach (Founding Director of the Agricultural Institute at San Michele) fostered the introduction of leading French varieties. In the hills of Kurtatsch with a southern exposure, Merlot and Cabernet Sauvignon find the ideal vegetation conditions and soil relationships similar to those in Bordeaux: chalky gravel with good drainage, and a favorable climate in early autumn for the final ripening phase of the grapes. "Soma" Merlot-Cabernet (the ancient Greek word for "body") is a cuvée that follows the French model Pomerol: a Baroque, lavishly corpulent Merlot sets the tone, and the distinct fruit of the Cabernet Sauvignon provides the spices, elegance, and depth. "Soma" Merlot-Cabernet has a lively, playful scent reminiscent of cherries, plums, and blackberries, as well as laurel and crushed peppermint leaves. The approach to the palate is solid and lush, with a rush of fleshy dark wild berries, while nuanced tannins give the round body a stable balance and a good constitution for a lengthy aging in the bottle.

The Kurtatsch Winery is one of the most important winegrowing cooperatives in South Tyrol and is located in the small municipality of Kurtatsch in the heart of the Überetsch region. The history of the winery goes back to 1900, when a few local winegrowers joined forces to produce wine together. Today, the Kurtatsch Winery has around 200 members who cultivate over 20 different grape varieties on a total of around 190 hectares of vineyards. The winery relies on sustainable cultivation of the vineyards, which is supported by the use of modern technologies and careful manual work by the winegrowers. The result is wines of the highest quality that regularly win awards at national and international competitions. The Kurtatsch winery is particularly well known for its white wines, first and foremost the Sauvignon Blanc, the Chardonnay and the Gewürztraminer. But also the red wines of the winery, such as the Lagrein or the Vernatsch, convince with their intensity and their balanced structure. In addition to the high quality of its wines, the Kurtatsch Winery also stands out for its innovative strength. For example, it received an award for its "Cold Cellar" project, which significantly reduced the winery's energy consumption with the help of solar panels and geothermal energy. All in all, the Kurtatsch Winery is one of the most important addresses for wines South Tyrol and stands for a successful combination of tradition and modernity, manual work and technology, as well as quality and sustainability.

For the gourmets among us, the delicious wild boar ham is recommended. The meat of the wild boar is not comparable to that of the domestic pig. It is aromatic and dark red in colour. Furthermore, the meat is leaner and firmer than that of the domestic pig.
The infused oils are obtained with our Extra Virgin Olive Oil Quattrociocchi. The olives, the citrus and the spices are cold pressed together. Each one of our product is made according to the traditional recipe. All the ingredients are high quality and organic.
A full-bodied yellow with green reflexes and with a fresh aroma of apples, apricots and a hint of sage. Dense and elegant. Long persistently.
