The St. Pauls Winery, also known as Cantina San Paolo, is a renowned winegrowing cooperative in the heart of South Tyrol, Italy. The winery was founded in 1907 by 23 winegrowers who joined forces to jointly market their wines. Today, the cooperative has more than 200 members and cultivates a total of around 190 hectares of vineyards. The St. Pauls Winery is known for its high-quality wines made the region's indigenous grape varieties such as Vernatsch, Lagrein and Gewürztraminer, but also international varieties such as Chardonnay, Pinot Noir and Merlot. The winery's vineyards are located at an altitude of 250 to 750 metres above sea level and benefit the region's climatic conditions, which are characterised by mild temperatures, plenty of sunshine and cool nights. A special focus of the St. Pauls Winery is on sustainable wine production. The cooperative has committed itself to the guiding principle of "quality instead of quantity" and relies on careful cultivation of the vineyards in order to conserve natural resources and minimise environmental pollution. Modern technologies are also used to ensure gentle winemaking. The wines of the St. Pauls Winery are award-winning and attract international attention. Particularly noteworthy are the Gewürztraminer, which is considered one of the best in all of South Tyrol, and the Pinot Noir, which is considered one of the best in Italy. The wines of the St. Pauls Winery are characterised by a fine balance of fruitiness and elegance and stand out for their high quality and authenticity. Overall, the St. Pauls Winery is one of the leading winegrowing cooperatives in South Tyrol and stands for high-quality wines that are characterised by the diversity and beauty of the region. The cheese, which is soft in texture and contains small holes, takes its natural, balanced flavour the creamy high-altitude milk which conceals all the fascinating secrets of traditional cheese-making processes in this area.
